Time:6 PM - 9 PM

Location: Tullibee at the Hewing Hotel, 300 N. Washington

Tullibee Butcher's Dinner: Guinea Hog

Join us for a strolling dinner celebrating the uniqueness of the rare heritage breed American Guinea Hog, aka "the Forest Hog". Available only once a year, these slow growing swine are raised with care by TC Farm in open pasture, are never fed corn or soy and are known for for their dark, richly flavored meat and delicious fat. The team at Tullibee will be preparing charcuterie, roasts, pastries, and desserts showcasing the pristine protein versatility of this amazing pig. While large format roasts cook over the open hearth, guests will have the opportunity to engage with the chefs, farmer and butcher and will learn about the breed, what it takes to raise great pork and how it's skillfully prepared. Guests will also be able to purchase an unlimited tasting glass of wines that will be hand selected from family owned, organic and/or sustainable vineyards from locally owned import and distribution company, Libation Project.
