Cheddar was the most popular cheese in the United States for 150 years, but how much do you really know about it? Can a cheese be both ubiquitous and under-appreciated? With Cheddar the answer is yes! We are fortunate indeed to have the acclaimed Gordon Zola Edgar – author of Cheddar: A Journey to the Heart of America’s Most Iconic Cheese -- to guide us through a tasting a variety of styles of cheddars to see which ones we love the best, to learn about how cheddar came to dominate North American cheesemaking, and maybe even to hear a bit (just a bit!) of cheese poetry from the 1800s. Class includes tastes of nine cheddars, a signed copy of Cheddar, and a fabulous swag bag!

We will be gathering at FOOD BUILDING, home to Red Table Meat Co. and Baker's Field Flour & Bread. You will be sampling these artisinal products as well as other gems from the specialty food world, such as Quince and Apple fruit preserves.
