St. Croix Chocolate Company is a delicious new vendor at the 2012 Market.
Owners Robyn Dochterman and Deidre Pope use some of the world’s best chocolate from Belgium, Switzerland and Venezuela. In addition to real vanilla beans, pure fruit, and natural flavorings, they create truffle centers using fresh, organic cream and butter produced at Crystal Ball Dairy in Wisconsin, along with honey from their own honeybees.
Above, Chocolatier Kyla Oesterreich and Sales Associate Courtney McKasy happily assist customers at the Market, describing the composition of each piece and offering samples if you're unsure of a flavor combination.

We've enjoyed a half dozen or so flavors between the May 12 and May 19 Markets, and look forward to the new creations they'll be offering at the Markets to come. Our latest choices (below) included raspberry, apricot lavender and pear caramel. Close your eyes and savor these silky morsels - they are divine.
