Satisfying Meatless Meals - Ingredients from the Mill City Farmers Market

With an interesting variety of ingredients from the Market, there's plenty of flavor, texture and color for satisfying meatless meals. This week, a large batch of roasted delicata squash, green beans and onions served as the base. Some days I had them with fermented carrots and Pesto Torte (a chevre product from Singing Hills Goat Dairy). For other meals, I substituted fermented red cabbage for the carrots, curry chevre for the Pesto Tortes, and added a scoop of kale and hazel nut pesto (also made with Market ingredients).
