Mill City Cooks: Ricotta Gnocchi with Spring Onions & Asparagus

For the June 3 Mill City Cooks demo, Chef Jenny Breen prepared Ricotta Gnocchi with Spring Onions & Asparagus.

For this recipe, Jenny used fresh ricotta from Shepherd's Way Farms and Moonglow from Cosmic Wheel Creamery. I always thought gnocchi was a potato dumpling, but this recipe has no potatoes. These dumplings are made with the two cheeses, egg, spring onions and flour, and seasoned with salt, pepper and nutmeg. (Note - if ricotta isn't available, you can substitue quark from Cosmic Wheel.)

The gnocchi mixture needs to chill for at least an hour before it's rolled into dumplings, lightly coated in flour, and boiled for about 5 minutes.

For the sauce, green garlic is sauted in a combination of olive oil and butter. To that Jenny added the water that the asparagus and onions were cooked in. You could also use chicken stock if you have some on hand.

To finish off the dish, the cooked gnocchi and asparagus were added to the sauce with additional shredded Moonglow cheese.
