Chef Jenny Breen took advantage of the newly arrived peas to prepare Pea & Mint Croquettes with Yogurt Sauce for the June 4 Mill City Cooks demo. Other Market ingredients include mint, spring onions, garlic and eggs.
The Yogurt Sauce included feta cheese from Singing Hills Goat Dairy and Greek yogurt. (Yogurt is now available at the Wedge Community Co-op Pop-Up Market, located next to the cooking demo area.) Garlic, mint and basil were also added to the sauce.
The dish is topped with pine nuts and chili peppers that have been briefly sauted in sunflower oil.
Jenny displayed the finished product on a dish from art vendor Adam Gruetzmacher.
