Mill City Cooks: Grilled Moroccan Beef Patties and Grilled Chopped Salad with Ghee

For the July 1 Mill City Cooks demo, guest Chef Heather Hartman prepared Grilled Moroccan Beef Patties with Feta Cheese and Fresh Herbs, plus Grilled Chopped Salad with Ghee.

The patties start with grass-fed ground beef from Sunshine Harvest Farm, to which Heather adds feta cheese from Singing Hills Goat Dairy, egg (also from Sunshine Harvest Farm), minced herbs, onion and garlic. Seasonings included salt/pepper, along with cinnamon and cardamom.

Singing Hills offers plain feta, as well as Curried and Tomato Basil versions. Curried is what Heather would normally use for this recipe, but it's a hot commodity and was already sold out before demo time. Hint from Heather - the uncooked meat mixture will be even better if it's allowed to sit overnight in the refrigeration.
