Mill City Cooks: Cold Cucumber Soup and Chilled Spiced Carrot Soup

For the Cold Cucumber Soup, Nick peeled, seeded and chopped the cucumbers. He then used an emulsion blender to puree the cukes with fresh grated ginger, honey and salt. Next, he whisked in yogurt, lemon juice, finely ground cumin and garnished with finely julienned radishes and other herbs.

The Chilled Spiced Carrot Soup took a little more work. First, Nick dry toasted the spices individually (this recipe calls for cardamom, coriander and whole fennel seeds).
