Get to Know Calvit's Drinking Shrubs - New at the 2017 Mill City Farmers Market

Phil Calvit first experienced shrubs when a bartender served him a shrub-based mocktail. Fast forward, and he's now one of the new faces at the 2017 Mill City Farmers Market with his Calvit's Drinking Shrubs. Shrubs are made by mixing fruit with vinegar and sugar, letting it steep and then straining out the solids. Phil offers a number of flavors, including Tomatillo-Tamarind, Ginger-Lemongrass and Beet-Ginger.

I frequently add a splash of shrubs to my gin and tonics, but as shown below, they're also good with charged water (or in a mocktail, like what hooked Phil). While the label says "drinking shrubs", it's more versatile than that. For example, shrubs can be the secret ingredient in a zingy salad or slaw dressing.
