Farmers Market Frittata - One Skillet Meal Using Ingredients from the Mill City Farmers Market

This Farmers Market Fritta recipe was featured in a recent Star Tribune Taste section.  You'll find all the ingredients at the Mill City Farmers Market, including eggs, green onions, tomatoes, greens (kale, Swiss chard or spinach - take your pick!), cheese, olive oil and even mustard. 

Friesago from Shepherd's Way Farms is an excellent substitute for Parmigiano-Reggiano, and you can find cheddar at the Prairie Hollow Farms booth. The recipe calls for Dijon mustard, but I love the Horseradish Mustard from The Market Chef. The Organic Olive Oil Herbes de Provence from French Nugget would also be perfect in this recipe.

 Add a scoop of plain Greek yogurt on the side and you got yourself a yummy, healthy meal.
