Explosion of Color and Flavor in Mill City Farmers Market Meal

Kim Eslinger I couldn't wait to make a meal using the first butternut squash of the season from the Market. A few crab apples were cubed with the squash and tossed with olive oil, rosemary, sea salt and pepper before baking. Arugula, blue cheese, cilantro and tomatoes were added once the squash and apples cooled. With a finishing drizzle of olive oil, all those flavors made for one colorful and yummy Market Meal. :)
