Mill City Cooks: Cold Soba Noodle Ramen with Sesame, Trout and & Greens

For the July 22 Mill City Cooks demo, Chef Jenny Breen created a Cold Soba Noodle Ramen with Sesame Sauce, Salmon & Greens.  In lieu of salmon, Jenny used fresh trout from Star Prairie Trout Farm (since Matt and his boys from Wild Run Salmon are currently fishing for salmon to bring to the Market later in the season).

To start, Jenny cooked the noodles - which only takes a few minutes because they are super fresh from Dumpling & Strand.

Next, the trout gets poached for 2 to 3 minutes, and then it's skinned, flaked and set aside to cool.

The recipe calls for mixed baby greens, baby bok choy, cucumber, tomato and scallions. Jenny demonstrated how to chop the veggies so they're not only pleasing to look at, but easy to eat.

Next, the sauce. It's made with creamy peanut butter, orange juice, rice vinegar, lime juice, grated orange peel, soy sauce (or tamari, if you prefer), fresh ginger, garlic, dried crushed red pepper and sunflower or pumpkin seed oil.

Shopping Basket from the July 22 Mill City Farmers Market

New in the basket this week are purple and green peppers, walla walla onion and beautiful cabbage (savoy ?). I sliced the onions and peppers and tossed them with Balsamic vinegar and sea salt. They marinated in the fridge overnight and are currently waiting for their turn on the grill.  Yum!

2017 Mill City Farmers Market Harvest Social Benefit is September 10

The annual Mill City Farmers Market Harvest Social Benefit is scheduled for Sunday, September 10, 4:30pm – 7:00pm in the Mill City Museum Train Shed, 704 S 2nd Street.

The Mill City Farmer’s Market invites you to join them at their annual Harvest Social to celebrate healthy foods, local farmers and the launch of their Charitable Fund. This new fund will expand the Mill City Farmers Market’s educational and food access programs, partnerships and grants to local, sustainable farmers and food makers.

Enjoy signature cocktails and an abundant farm-to-table organic dinner prepared by the market’s chefs in the historic Mill City Museum Train Shed.

Ticket are $125 - $250. Please RSVP by August 15.

For the Cold Cucumber Soup, Nick peeled, seeded and chopped the cucumbers. He then used an emulsion blender to puree the cukes with fresh grated ginger, honey and salt. Next, he whisked in yogurt, lemon juice, finely ground cumin and garnished with finely julienned radishes and other herbs.

Get to Know Fair Anita - New at the 2017 Mill City Farmers Market 

Cara Lahti and Anna Bottila (pictured below) debuted Fair Anita at the July 8 Mill City Farmers Market. The jewelry, clothing, cards and other items offered are fair trade products made by over 8,000 talented, yet marginalized, women in 16 countries. It's a wonderful feeling knowing you're helping someone earn a better life for themselves and their children when you wear, using or gift these items. Scroll to the end of this post to see a short video of Fair Anita's founder Joy McBrien explain how this organization came to be.

They will return to the MCFM on August 5 and September 2. You can also find them on Facebook, Instagram, Twitter and Pinterest.

Mill City Farmers Market's Tuesday Night Markets in The Commons Start July 18!

New this year - Mill City Night Markets with your favorite MCFM vendors at The Commons, 425 Portland Avenue S.

The first Night Market will be July 18 from 3:30pm to 7:30pm, and continue every Tuesday night through September 26.

Pick up farm fresh, organic produce and local artisan foods for an easy weeknight meal. Prepared food vendors will be cooking up seasonal recipes, so come hungry, stay, listen to live music and have a picnic supper in The Commons!

The patties start with grass-fed ground beef from Sunshine Harvest Farm, to which Heather adds feta cheese from Singing Hills Goat Dairy, egg (also from Sunshine Harvest Farm), minced herbs, onion and garlic. Seasonings included salt/pepper, along with cinnamon and cardamom.

Singing Hills offers plain feta, as well as Curried and Tomato Basil versions. Curried is what Heather would normally use for this recipe, but it's a hot commodity and was already sold out before demo time. Hint from Heather - the uncooked meat mixture will be even better if it's allowed to sit overnight in the refrigeration.

Get to Know Northland Visions - New at the 2017 Mill City Farmers Market

Northland Visions, located at 1113 E Franklin Avenue, is a new Mill City Farmers Market vendor for 2017. Store Manager Greg Bellanger and his wife Angela made their first appearance at the June 24 Market with an array of Native products ranging from wild rice to maize popcorn.

The Franklin Avenue location includes a gallery and retail space featuring original items made by Native peoples from the Woodland and Plains tribes of the upper Midwest in what is now Minnesota, the Dakotas, Wisconsin, Canada and other northern states stretching from Montana to the east coast.

Shopping Basket from the June 24 Mill City Farmers Market 

New in the basket this week: Maize popcorn and Tanka Trail Buffalo Bites & Trail Mix from Northland Visions, a new Mill City Farmers Market vendor for 2017. Last October, sisters Kylene and Mel Guse from GYST Fermanation Bar were guests at the Mill City Cooks demo, and they were back at the June 24 Market with a variety of their lacto fermented vegetables. Also, the first red potatoes and carrots of the season arrived. The Sonora White from Heritage Breads is to die for - fantastic taste and texture! There are only 2 in the basket, but I picked up one each of all four flavors of Darling Pickle Dips. They're earmarked for potato salad, collard green wraps, and maybe one to share at the office... :D

Eggs in Clouds with Ingredients from the Mill City Farmers Market

This looked like a fun way to do something different with eggs. Find all the ingredients from MCFM farmers: Sunshine Harvest Farm eggs and bacon, Friesago cheese from Shepherd's Way Farms, and chives from your favorite produce vendor.

Eggs in Clouds

Ingredients:
4 eggs
1⁄4 cup parmesan cheese, grated (substitute Friesago)
1⁄4 cup chives, chopped
1⁄4 cup bacon, cooked and crumbled
pepper to taste

Directions:
- Separate eggs, putting whites in 1 large bowl and yolks in 4 separate small bowls.
- Whip whites until stiff peaks form.
- Fold in cheese, chives and bacon.
- Spoon into 4 mounds on parchment-lined baking sheet; make a deep well in center of each.
- Bake at 450 degrees for 3 minutes.
- Then add 1 yolk to each well; season with pepper. Bake until yolks are just set, 2 to 3 minutes.
